It does set, yes. That is due to the collagen from the bones when boilt, and is how gelatin works. This is usually a good sign that the broth is good.

A properly made tonkotsu broth is full of gelatin the byproduct of collagen breaking down. When you reheat it, that gelatin creates the rich mouthfeel, and the emulsified pork fat is what makes the broth white.

How do you get the fat to not separate? Even with high collagen bones, after refrigeration it always separates for me 🙁

yeah that looks normal, that’s the solidified collagen and pork fat at play. bring it to a simmer and it should return to liquid, might even taste better

Is it all like that or is that the fat layer that has risen and set on top of the broth? While broth can set like that the way it rubbed against something and the way it looks makes me think it’s just the fat off the top. Near the handle there are little darker bits stuck to it that look like little bits of very jellied broth.
