I bought this pack of Ahi tuna cubes yesterday from a seafood shop locally, ideally to make poké at home . It was in a deep freezer with all the other “sushi/ Sashimi grade” cuts of tuna and salmon. Once I got home I noticed the label says “intended to be fully cooked.”

Is that just a protocol statement label, or can I use this for pokè?

I have read many comments on people saying sushi/ sashimi grade is not real… no ahí tuna carries parasites to begin with, or, if it was in the freezer it should be fine.

But I just want a larger view on this, do we think I can use this for pokè or not??

    Yes you absolutely can. Those packs of pre-diced, frozen tuna are designed for that specific purpose. Takes all the food safety concerns away so you don’t gotta worry.

    Just make sure it’s defrosted fully. When you cut the bag open, make sure you pat down all the excess moisture before turning it into poke.

    safe in terms of parasites, but as with all raw foods bacterial risk is present. Especially if you don’t know how the fish was handled

    Pro tip: Restaurant Depot sells poke and ground tuna for roughly $7/lb (in 1lb quantities, with a deal if you buy 6 packs or more). If you’re not a business owner, just sign up for a 1 day pass at the customer service desk when you walk in. Just made incredible homemade sushi this past week that’d rival some of my local spots, all for about $10 per meal. Will never be buying (ground or poke) tuna elsewhere again.

    Straight up, that’s the point of this pack. There aren’t any cooked tuna preparations I can think of that use cubed fish.

    If you’re not sure shove it in the freezer for the next 7 days. If it hasn’t thawed yet.

    You should try speak to your nearest fishmonger. Lots of the ones near me have salmon and tuna that is suitable for making sashimi etc. sometimes they even have sea bass you can use.
