what was this paper thing on my salmon at sugarfish?
at first i thought it was plastic lol, but it was soft and edible and broke apart as i ate it, didn’t really have flavor other than sesame, does anyone have any clue what it is?

They forgot to peel the adhesive backing off the sesame seeds

What was the item you ordered? They have a few salmon items. It could be rice paper or a kombu gelé

i noticed they started doing this a couple years back, never bothered to ask about it. i feel the salmon was better before.

It’s a paper-thin sliver of kombu. It’s often marinated when served like this, but obviously can’t speak for yours without tasting.
Edit: As others below have pointed out, it’s called battera kombu. (Had forgotten the name.)

Kombu or something like that. I think it’s pickled or marinated kelp or something, right?

It’s more than likely a gel made from a sauce like yuzu, ponzu, or a kombu extract. Could be a translucent soy paper or something if the sort but I feel like the other options make better sense from a culinary perspective as soy paper doesn’t add much taste
