AquariusMonologue’s Vegan Virgin Coquito Recipe:

For the tea:

  • Add 3-4 cinnamon sticks, 2-3 star anise, a teaspoon of cloves, and a 1/4 teaspoon of allspice to a pot
  • Add 1.5 cups of water to pot and bring everything to a boil
  • As the water is boiling, add a teaspoon of ground cinnamon and a teaspoon of ground nutmeg to the pot. Stir
  • After 7-10 minutes or until the water boils down to about a cup, add vanilla extract to the tea. Stir together
  • Turn stove pot off and allow the tea to cool

For the milk + cream mixture:
In a mixing bowl, combine:

  • 1 can of evaporated coconut milk
  • 1 can or a cup and a half of coconut milk
  • 1 can of sweetened condensed coconut milk
  • 1-2 cans of Coco Lopez cream of coconut (I used 2 cans because I like my coquito on the thicker side)
  • 1 teaspoon of vanilla extract
  • For the ground cinnamon and nutmeg, I eye these things, I don’t measure them. Some recipes may call for 1-1.5 tsp of ground cinnamon and 1/2 tsp of ground nutmeg but again, this is something you can add to your taste
  • Blend all of this together well (using a blender, an electric whisk or even hand whisking it yourself if you don’t have a blender)

Once the tea has cooled down, strain the tea using a strainer into the milk mixture. Blend this together well.

Store the drink in your container of choice (I used mason jars and airtight bottles) in the fridge overnight. Add some cinnamon sticks (1-2) to the containers/bottles before pouring the drink inside.

Enjoy!

I have never seen evaporated coconut milk!

I had a coworker selling homemade coquito on the DL as a side hustle and was like wait what is in that again it sounded so insane and very rich. I don’t remember what alcohol was in it exactly

  2. Wow, I’ve never had that before but it sounds so good! I need to get some evaporated coconut milk.
