Lombardo peppers

Hi all, I moved this Lombardo plant indoors for winter about a month ago. I think they are (over)ripe to harvest.. are these shriveled ones still useable?

What do you recommend I can make with this. I want to make a hot sauce but I believe these aren't hot at all…
