Smoked for about 40 mins in the kettle over lump and a couple chunks of cherry wood. Tasted incredible, but are these "burnt"?

The first part of your last sentence is what you should primarily be focused on, “Tasted Incredible”. As long as there was no bitter aftertaste, it’s not to dark AND you didn’t have dirty smoke. So great job! There will always be someone who says “it’s too dark” for those finicky people, don’t invite them back. If your rub has any paprika, brown sugar, or black pepper, all 3 of these will darken as they smoke. Not a bad thing, just a natural thing.
FWIW, I love oak wood for smoking just about everything. I do use Hickory every now and then. Fruit words, I’ve heard are best green, for imparting flavor during cooking – I heard this from Myron Dixon.
