
Ingredients (makes 4 pieces):
• 4 thick cucumber slices (about 1/2 inch each)
• 2 oz smoked salmon
• 2 tbsp cream cheese, softened
• 8–12 tiny slices of green onion (2–3 per cucumber slice)
• 1 tsp capers, drained
• 4 small pieces of avocado
• Dill, to taste
• Lemon wedge
Instructions:
1. Spread about 1/2 tbsp cream cheese on each cucumber slice.
2. Add 2–3 thin slices of green onion and a few capers on top.
3. Fold or roll a piece of smoked salmon and place it on each cucumber.
4. Top with a small piece of avocado.
5. Sprinkle lightly with dill and finish with a squeeze of lemon.
6. Serve chilled.
