I’m Valentina and today we make the BEST chocolate chip cookies you can easily make in your home kitchen! 140 g unsalted butter Melt over low heat When starts foaming keep on mixing and cooking over low heat Bring to a simmer: specks solids are forming. Keep on mixing to avoid burning. Pay attention when specks solids becomes brown: remove from heat to avoid burning. The entire brown butter cooking needs about 15 minutes on low heat, small flame. Immediately pour the hot brown butter into a heatproof bowl to quickly chill. Pour all the brown speck solids! Check that brown butter should be 110 g Remove any excess or add some normal melted butter if not enough to reach 110 g 50 g white sugar 100 g brown sugar Mix and set aside to slightly cool down at room temperature. Meanwhile chop 60 g dark chocolate Set aside for later. 1 small egg 1 small egg yolk 1 tsp vanilla extract Mix until smooth and creamy. 170 g all purpose flour 1/4 tsp baking powder 4 g (1/2 tsp) baking soda 1/2 tsp salt 40 g chocolate chips 60 g chocolate chunks Get a very soft and a bit sticky dough. 5 cm diameter scooper Get 12 cookies. Place some chocolate chips and chunks on top. Place in refrigerator for at least 1 hour. Do NOT skip this step! Line with parchment paper or silicone mat. Place 5 cm apart. Bake in preheated oven (fan off, upper+lower heat) at 180°C-350°F for 8-9 minutes. Cool down on the baking sheet. Thanks for watching, let me know if you like it!
