
I went to the basement today to grab jar of jam for use and came across several jars of jasmine green tea and ginger jelly I made a few years ago. The color is significantly darker than when I made it but all the lids haven't had their center pop up.
I would post the recipe so you could look it over but I lost it. I know I strained out the tea leaves and ginger pieces. I don't remember if I put any lemon in it.

What recipe did you use and what was the source?
Colour darkening is very normal on jams/jellies over time in my experience.
I can’t speak to whether you’re using a safe recipe though and if this is safe. I’ve never seen a tested green tea and ginger jelly recipe before (though it may exist). A jelly made from those ingredients would need acidification to be safe though I think.
A jelly made from tea needs acid and added pectin for it to set up. If it set up, then you added something, probably lemon juice.
Jams and jellies change color with age. Ideally I try to eat my jams within 12-18 months with negligible change in quality. After a couple years they start to get darker. You said it’s been a few years so I am not surprised it has changed colors.
