Marinated the chicken in lemon juice, olive oil, paprika, red pepper, oregano, dill, basil, and garlic. Pan cooked it. White rice on the side. Chickpea salad with cucumber, tomato, feta, red onion, olive oil, lemon juice, and red wine vinegar. Salt and pepper on everything. The dressing from the salad is so good with the rice and chicken!

Tried to go for half the plate veggies, 1/4 protein, 1/4 carb. Ideally, I’d do more veggies, add greens, no white rice or swap it/half it with quinoa or brown rice but we did the best we could with what we had!
