Born in the Trentino mountains, smacafam was made to “beat hunger,” a simple mix of flour, fat, and sausage baked until golden and rich enough to feed a crowd. I love how it fills the kitchen, because the smell of sausage and bread mixing with cold mountain air is umbetable. Once a Carnival pie, now it’s just as comforting baked in small portions, still warm from the oven after a long day outside. Hearty, rustic, and honest, it’s the evidence that even the humblest dishes can fill both belly and spirit.

Welcome to Italian Forgotten Classic, where Italian food becomes more than just pasta and pizza. Today we are in Tantino to meet a dish with a funny name, Desmaka. In dialect, it means the hunger bitter. That’s exactly what they did for poor families in the 1800s when the pantry was almost empty. They mixed flour, milk, and lard into a simple butter, then dropped in bits of lucanica sausage. Heaven feeling, perfect for carnival right before Lent. It wasn’t pretty, but it filled bellies and kept the family going. Too plain for restaurants and too heavy for modern taste, smack stayed mostly in villages and family kitchens. This dish is a reminder of how people made joy out of scraps, but also has the power to bring in a little montine humor and heart to your own table. of your album.

If I'm not mistaken λουκάνικα (loukánika) means sausages in Greek, so this recipe has sausages sausage in it, I love it.

In veneto we have the "Macafame", which sounds almost the same, but it's a completely different dish (being a dessert), but it means the same as the trentino version, since it's made from stale bread!
