🍅 Salsiccia e fagioli all’uccelletto (Serves 2)

INGREDIENTS (Serves 2)
1 × 400 g can cannellini beans, drained & rinsed
1 x 400 g can peeled plum tomatoes
200 g Heck chicken sausages (about 2 sausages), casings removed
2 garlic cloves, whole or crushed
3 fresh sage leaves
1 small sprig rosemary
1 tbsp olive oil (I used low calories oil)
Salt & black pepper, to taste

METHOD
1️⃣ Build the flavour base
1. Heat olive oil in a medium sized pot.
2. Add sage, garlic and rosemary (optional) and let them simmer for 1–2 minutes to infuse the oil.
3. Now remove the garlic if you prefer a milder flavour.

2️⃣ Cook the sausages
4. Remove the skin of the chicken sausages, break them apart and add the meat to the pot.
5. Cook until lightly browned/cooked through.

3️⃣ Add the tomatoes
6. Crush the peeled plum tomatoes by hand and add them to the pot.
7. Simmer for 8–10 minutes until slightly reduced and thickened.

4️⃣ Add the beans & finish
8. Add the drained cannellini beans.
9. If the sauce is too dry, add a splash of water and simmer for 5 minutes.
10. Season with salt and pepper to taste and there you have it!
