Sorry for posting 2 days in a row I just feel so inspired when I do have a presentable day 🤣. I had late breakfast today and I didn't have time to eat proper lunch so I had most of my calories for dinner.
Late breakfast: Potato salad & avocado veggie toast + lettuce (357kcal)
"Lunch": Healthy apple brownie thing with protein cream (317kcal) (2nd pic: content of the "brownie")
Dinner: Zucchini-turkey-mince Mousaka with Cauliflower-broccoli mash (it's so green because I added a bunch of fresh parsley OK!!!) & some cheese (296kcal)
& Meatball Veggie Soup (279kcal)
*Info on how I calculate my servings:
For meals like the potato salad, the cauliflower mash, the soup – After I have my first serving, I'll estimate how many servings this dish will be for me. For instance, I've estimated my potato salad will be 5 servings for me, and the mash 3 servings.
If I have a slightly bigger/smaller serving, I might reflect that in the serving size. Even if it's not 100% accurate, what matters is that by the time the dish is gone, I've logged the whole of it.
For the moussaka, my baking dish is perfectly equivalent to 4 servings for me. Hence 1/4th.
