The Best Carbonara youโ€™ve ever tried!
Separate 3 egg yolks from the whites. Toast some peppercorns over medium heat. Grind the peppercorns and add to the egg yolks. Fry cubed guanciale(very hard to find) or pancetta(what I used.) Drain fat to the egg yolks. Reserve meat for garnish. Grate Parmesan to the yolk mixture. 1/4 cup Parmesan to one egg yolk. Cook pasta(fettuccine or spaghetti) till al dente. Reserve pasta water. Add egg Parmesan mixture and reserved pasta water to the pasta. Mix well until evenly combined. Enjoy!

  5. Italy here! U can do it better! Only black pepper! Pasta seems too dry. Mix the fat of guanciale with eggs, pepper and pecorino.
