
Tofu pan “fried” in a little bit of avocado oil, pepper, garlic, ginger and then tossed in a simple tamari, rice vinegar, mirin, sriracha sauce. Steamed white rice on the side. Steamed broccoli and a vinegar cucumber onion salad for our veggies.

Recipe: (I’ll do my best because I measure with my heart lol)
Optional – Drain and press your tofu for about 15 minutes.
Meanwhile, slice half of a red onion and as much cucumber as you’d like. Sprinkle with black pepper. Toss the salad with 1 tbsp apple cider vinegar, 1 tsp rice vinegar, 1 tsp sriracha, 1 tbsp honey.
Make the tofu sauce – 2 or 3 tbsp tamari or soy sauce, 1 tbsp rice vinegar, 1 tsp mirin, 1 tsp sriracha, 1/2 tsp sesame oil. Add 1 tbsp water and 1 tbsp corn starch if you want a thickened sauce.
Heat 1 tbsp avocado oil in a pan on medium high. Cut your tofu into cubes and pan fry on at least 2 sides until brown and crispy. Wait for the tofu to be brown on the pan and release from the pan without forcing it, otherwise you’ll ruin your tofu cubes. Sprinkle with about 1/2 tsp each of garlic powder, onion powder, ginger powder, black pepper. Let that cook for a couple minutes. Turn heat to low and stir in the tofu sauce until thickened.
Steam a bag of frozen broccoli on the side and 1 cup rice with 1 cup water. Enjoy!
