Leftover Pasta? Make the CRISPIEST Frittata di Pasta!

Don’t throw out that leftover pasta! 🍝🍳 This classic Italian Frittata di Pasta transforms yesterday’s meal into a delicious, crispy-on-the-outside, cheesy-on-the-inside breakfast, lunch, or dinner. It’s so easy and tastes incredible warm or cold!

Ingredients:
1 lb Penne Lisce, cooked
6 eggs
1 cup grated Parmigiano Reggiano
1cup grated Pecorino Romano
1 cup tomato sauce
Fresh basil, chopped
Salt & black pepper
Extra virgin olive oil
Instructions:
1. In a large bowl, mix the cooked pasta with the eggs, Parmigiano, Pecorino, tomato sauce, basil, salt, and black pepper.
2. Toss well until every piece of pasta is evenly coated. If it looks a little dry, add a splash of extra tomato sauce or one more egg.
3. Heat a generous drizzle of olive oil in a 10 inch frying pan over low heat.
4. Slide the pasta into the pan, spread evenly, cover with a lid, and cook low and slow for about 20 minutes.
5. Use a flat plate to help you flip the frittata. Add a touch more olive oil to the pan, then slide it back in.
6. Cook for a few more minutes on medium heat until the outside is golden and the inside is set.
7. Slice and enjoy warm or at room temperature, it’s even better the next day.
