Have you ever had a cake with a cup of olive oil? If not, you’ve never had olive oil cake, which is a shame. It starts with 1 cup of olive oil, 1 and 1/2 cups of sugar, and three eggs. Whisk this all together, and then add the zest of three lemons, half a cup of lemon juice, 2 tsp of vanilla extract. Make sure everything is incorporated. Add in 1 teaspoon of salt and a half a teaspoon of baking soda, and a half a teaspoon of baking powder. two cups of allpurpose flour and one cup of milk. Adding a little bit at a time and alternating. So, a little bit of flour. Pour in a little milk. A little more flour, a little a little more milk until everything is incorporated. You want the batter to be smooth, but you don’t want to over mix. Pour into a 9-in spring form pan. Garnish with a little bit more granulated sugar on top just so as it bakes it gets a little bit crispy. And then you bake at 350 for about 50 to 55 minutes. And it will be nice and lightly golden brown when it’s done. For all of you scared that it’s going to taste like too much olive oil, it won’t. It will be nice and mild. It really just adds moisture and a little bit of that. Try it out.

in Italy we have a similar cake, is called Schiacciata alla Fiorentina, Is made with olive oil!
Hummingbird and carrot cake has a heap of olive oil. It's light and delicious. A little different to this recipe.
