Hot Honey Whipped Cottage Cheese Dip
Ingredients:
* 1 tub First Choice Smooth Cottage Cheese
* 1 Tbsp extra virgin olive oil
* 1 Tbsp hot honey, plus more for serving
* Chopped, roasted and salted pistachios
* Fresh basil leaves for serving
Directions:
1. Add cottage cheese, olive oil and hot honey to a food processor. Blend on high until smooth and creamy.
2. Spoon the whipped cottage cheese into a bowl or onto a small plate and top with a drizzle of hot honey, fresh basil and chopped pistachios.
Sesame Cheese Sticks
Ingredients :
* 1 sheet of Puff Pastry
* Egg wash
* Sesame Seeds
* First Choice Cheddar Cheese, grated
Directions:
1. Bake on 150°C for about 10 minutes, then lower to 130°C for 10 minutes.
Greek Salad Skewers
Ingredients
* Cherry tomatoes
* First Choice Feta, cut into cubes
* Kalamata olives, pitted
* Cucumber cut into cubes
* 12 (6-inch) bamboo skewers
Vinaigrette:
* 2 Tbsp olive oil
* 1 Tbsp red wine vinegar
* 1 Tbsp fresh lemon juice
* 1 garlic clove, minced
* ¼ tsp dried oregano
* Kosher salt and fresh ground black pepper
Directions:
1. In a small bowl, whisk together the vinaigrette ingredients. Season with salt and pepper to taste. Set aside while you prepare the skewers.
2. Assemble the skewers, thread tomato, feta, olive and cucumber slice onto the skewer. Transfer to a serving platter.
3. Drizzle the skewers with the vinaigrette. If desired, garnish with parsley and season with additional salt and pepper.
Feta Cucumber Checkerboard Salad
Ingredients:
* 1 block of First Choice Feta Cheese
* 1 large cucumber
* Balsamic reduction
* Freshly ground black pepper and salt
Optional: fresh herbs (mint, basil, or oregano)
Directions:
1. Cut the feta and cucumber, match their sizes.
2. Use a flat serving plate or platter, alternate the feta and cucumber pieces in a checkerboard pattern. Drizzle balsamic over the top. Season with black pepper and salt, add herbs if using.
Serve cold as an elegant starter or side.
