    Gimbap sounds very SEA to me and I was wondering if there was some sort of connection there or if this was just me being dumb.

  3. I’ve only ever found legit kimbap in Hawaii, going to have to check this out when I’m in LA.

    Fullerton is legit & as is most of LA/OC food. I had a friend visit me from Korea and they told me the Korean food they had here was better than in their home country lol

    US Koreatowns can have better Korean food than is easy to get in Korea – fight me!

    Access to better/more ingredients relative to the price people are happy to pay for a basic meal, recipes that often came over in the 80s/90s before Korean food was so commercialized and sweetened, and fusion ideas that are more for actual taste and flavor than just gimmicks.

    Isn’t kimchi a fermented food? How can it be fresh? Doesn’t it need to ferment for a couple days? How can it be made in the morning?
