
A local deli does an amazing sandwich/ wrap called the “herbivore” that I adore but sadly I now live 30 mins away from them – so I’m attempting to recreate them at home. Tofu sliced and marinated in soy sauce, garlic powder, and maple syrup then baked at 425 for 20 mins. Banana peppers, fresh bell peppers, cucumber, baked tofu, spinach, arugula, and hummus on a spinach and herb wrap. Potatoes on the side were tossed with avocado oil, salt, pepper, and garlic powder and air fried at 400 for 15 mins. Definitely very filling, I couldn’t finish it!

I’m a bit new to tofu. Was there a certain type that you bought do you have to prep it other than the marinade?

Yum!! Looks so good. I bet this would be good too with the Trader Joe’s teriyaki tofu and maybe some broccoli sprouts 😋 definitely going to try this!! Love how customizable it could be too.
