Best Tuna Belly
Episode 1
Mini series where we are on the hunt to find the best canned tuna belly that we can get our hands on.
In this episode, we explore a selection of what I consider the lower tier tinned fish for tuna belly.
Particularly because the
cannery/manufacturer may not pinpoint the exact species in the tin. A lot of them will use a combination of different species or they do not reference the species they use at all.
Maybe this is for seasonal reasons or catch availability, not entirely sure.
This is the mash up of skipjack, bigeye or yellowfin.

I think you’re close to the difficulty/problem with Ventresca.
It has the promise of being very special, fatty, and different from cheaper standard issue tuna. It’s much more expensive and yet it almost always ends up being a disappointment and just like “regular” tuna.

They look nice but have you or are you going to review this one Yurrita gastronomica 1867 Ventresca . White box around the $ 10 mark.
I worked in a fancy corporate cafeteria and we would fillet salmon every day into 4-5 ounce portions.All the belly was cut as scrap but we would cook it right away and chill it for salad bar. The belly was definitely the best.
I’ve only had ventresca once, Don Bocarte Bluefin, and it was fabulous. That was a gift from someone who had brought it to me from Europe along with some other cans, so I was not influenced or biased from price or prestige because I wasn’t aware of that at the time, nor would I have expected it so pricey.
I immediately knew it was something special. The difference wasn’t subtle.
Hey thats funny, i had a jar of Tonnino ventresca over the weekend! It’s a fantastic tuna, but definitely not THAT much better from good canned tuna IMO. I think tuna belly shines best when raw for otorro. As soon as it’s heated up to seal the can/jar, the fat renders out of it and you lose so much if what makes it special.
That said, i really enjoy the Tonnino ventresca, and it’s only $8 a jar so worth it as an occasional treat but not daily driver, and there are definitely better tins out there
How would you rate the Ortiz tuna belly?? That’s a pretty accessible one for me and I’ve been eyeing it up

Interesting. The only one of those I’ve tried was the La Narval and I also found it very dry and my tasting notes complain a lot about how the $7 tonnino tin was way better. Looks like I should pick up some Minerva – I’ve liked their other products so not too shocking their belly would be good.

I’ll second the Minerva brand, always on point. Probably my #1 so far.
