Created a low calorie carrot soufflé recipe that is a big hit in my house. Creates 4 voluminous portions. Entire soufflé is ~450 calories or ~115 per serving. Hope you enjoy!

Ingredients:
1lb carrots
3 eggs
3 tbs flour
1 tsp vanilla extract
1 tsp baking powder
1 tsp salt
1/2 tsp cayenne if you like a lil spice
1/4 cup erythritol
(1/2 cup if you prefer sweeter)

Directions:
Preheat oven to 350.
Boil carrots 20 mins.
Add all ingredients to blender and blend.
Grease baking dish with cooking spray.
Add all contents to baking dish.
Bake 1 hour.
