Not related to serious eats directly but we do goose. It’s a throwback to my dad’s memory of Christmas in the Baltics between the world wars. He became a refugee and came to the states in the 50s and built a life here – we throwback to the old country heritage and memory with the sauerkraut he taught us(cooked with dark beer and juniper, caraway, onion and green apple) roast apples and more.
That’s Christmas Eve. Christmas Day is Kenji’s prime rib, Cesar, twice baked potatoes and a yet to be named other green.
Your dinner sounds awesome! I decided to do Mexican food this year. So, I am making pork tamales and enchiladas and black beans. Family is filling in most of the rest (only 10 of us for dinner).
