I just made my first macarons tonight. I made cotton candy swirl and key lime pie. I can’t figure out why the shells seem bumpy? Any advice?
Hi! Tonight I tried to make macarons for the first time. I tried two separate flavors. For both I sifted all of my ingredients and mixed until I achieved the “lava” consistency with no breaks…still I am getting bumps!! Please help!

Great job!! 🤩 Use a Ninja to grind the almond flour to a finer consistency. A blender will not work because it gets too hot and the oil in the almond flour will separate. I used to own a bakery and made thousands of macaron shells. The Ninja (the kind with a pitcher and the motor goes on top of the lid) made a huge difference. 😊

i get that when i don’t whip the eggwhites long enough

I also sifted but when the chunkier bits are not going through I don’t push them through. I chuck them. If it’s like a teaspoon it won’t ruin the recipe.
