Ingredients:
Wild-caught salmon fillets
Lemon slices
1/4 cup Dijon mustard (yellow variety recommended)
1/3 cup raw honey
1/4 cup fresh-squeezed lemon juice (about 2 large lemons)
3 tbsp butter, melted
4–5 garlic cloves, minced
1/4–1/2 cup olive oil
Salt
Black pepper
Smoked paprika
Dash of cayenne (optional)
Chopped dill

Directions:
1. In a bowl, combine the Dijon mustard, minced garlic, melted butter, olive oil, lemon juice, honey, and chopped dill. Season with salt, black pepper, smoked paprika, and optional cayenne. Mix well and set aside.
2. Arrange lemon slices on a baking dish. Pat salmon fillets dry with a paper towel and place them on top of the lemons.
3. Pour the sauce over the fillets and brush to evenly coat.
4. Bake at 400°F (205°C) for 10–12 minutes, or until the salmon is just cooked through.

It will continue cooking slightly from residual heat once removed. Internal temp should reach 145°F and the salmon should flake easily with a fork.

5. Serve with mashed potatoes and your choice of vegetables.
