    Royal icing dries blotchy when moisture, fat, or uneven drying interferes with the sugar setting. The most common causes are icing that’s a bit too thin, humidity, colour not fully mixed, grease contact (even tiny amounts), or drying the cookies in a space without enough airflow. To prevent it, keep tools grease-free, mix colours well, use proper flood consistency, and let cookies dry with light, even air circulation. Your cookies still look awesome!

    Sugar Art gels dry like this pretty consistently for me. I assume they react to the lemon juice I use to thin out my royal icing
