Oh, hello. Welcome to Sandwiches of History today from the Arizona Cookbook of 1911, ee’re going to be making the Egg Salad Sandwich. But the first thing we have to do is make a salad dressing. And so I’m following a recipe for salad dressing from 1911. Let’s get into it. First thing we do is heat up some vinegar over a double boiler. Now, in a bowl, we combine mustard, salt, sugar, and paprika. Give that a little mixy mix Add an egg and beat it. And then add in cream. Alright, now that the vinegar is hot, we need to add our mixture to it. Give it a little whisk. And now we cook that until thick. Now the recipe says to cook it until it’s thick, which it is thick but not too thick because it will thicken as a cool. So I guess now we got to let it cool. Alright, so now the sandwich recipe says to take two triangular pieces of bread and spread our, dressing on each of those. Then we lay on slices of hard boiled egg. Lettuce And for some reason, more dressing. Even though there’s dressing on the other piece of bread. I don’t get it. Okay, let’s give this Egg Salad Sandwich a go. First of all, salad dressing like this is the precursor to Miracle Whip. So it is at once tangy, sweet and salty. It’s not bad, but it’s also not great. I do want to try and plus it up a little. You probably saw it coming a mile away, but I’m gonna plus it up with some black pepper Just a little bit. Okay, let’s give this Egg Salad Sandwich, plussed up with just a touch of black pepper, a go. So first of all, egg and black pepper. Nice. But it’s also helping to offset the sweet and the tangy of that salad dressing. That was kind of overpowering things at first. Now we’ve got this nice peppery bite that’s kind of battling it out with it a little bit. It’s tasty. Well, I gotta say the original Egg Salad Sandwich. It’s just that salad dressing was just too much. It was overpowering. I’m probably going to give that like a 4 1/2 Plussed up with what I consider to be the correct amount of black pepper, that’s more like a 6. I’m definitely going to finish that. I don’t know that I would make this version of an Egg Salad Sandwich again. But I’ll definitely finish it now with the black pepper because I think it’s nicely balanced. Go figure. I thought it looked pretty good. I just bought Chef's "Salad Cream," and Chef's "Brown Sauce," from my local Irish specialties shop. (In Masxachusetts this is a regular convenient store run by Indian folks that happens to be in a dense Irish immigrant area so they cater to nostalgia, the other one I know is an Italian deli, go figure. I've never tried either, but like marmite, vegemite and Branston's pickle, I'm curious to see ypuuse these Irish/UK staples. 🎉
This definitely wasn’t what I thought it would be. But, I saw for the first time today a UK “salad cream” – a condiment with Mayo, vinegar and mustard and wonder how close this may be.
Any lay people to food, first off, what are you doing? Second, this is actually normal amount of pepper, kinda light really. If you disagree, try new things with flavor, then feel free to comment.

Is there bread that has black pepper incrusted? If so , Oscar Myer cracked pepper turkey (better brands possible but the gest), pepper salami, peppered bacon , fresh sliced tomato seasoned with sugar & pepper , pepper goat cheese, butter lettuce & mayo…. Captain Pepper's Blt
I just noticed that you have a very unique cooktop with the ceramic briquettes. How does it do with hamburgers and steaks? Also, how well does the vent hood prevent your house from smelling like hamburgers and steaks? I’m jealous. That looks very cool!!!

For some historical perspective, when this cookbook came out, Arizona Territory was still a year from statehood. Also, native son Barry Goldwater was 2 years old.

Make Cesar salad dressing for it
The dressing is also similar to mayonnaise! I am curious to try just adding some spices to mayo and using slices egg and lettuce instead of doing the whole salad making thing. Seems more doable.
I also believe that this is the correct amount of black pepper.
