Wraps:
2 large whole wheat or spinach wraps
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, thinly sliced
1/4 cup kalamata olives, sliced
1/2 cup baby spinach or romaine
Mashed Feta Spread:
3/4 cup feta, crumbled
2 tbsp plain Greek yogurt
1 tbsp olive oil
1 tsp lemon juice
1/2 tsp dried oregano
Black pepper
Optional:
1/2 cup chickpeas or lentils
1/4 tsp ground cumin

I love this Greek salad wrap and you will too. It’s yet another way to reinvent the most iconic Greek recipe in the world. Horati kis salada or Greek village salad and it makes a great lunch. To make it, mash the feta and Greek yogurt together with extra virgin Greek olive oil, lemon juice, oregano, and black pepper. Have the teardrop tomatoes. Slice the cucumbers, peppers, and onions. Spread the feta onto a tortilla or other bread wrap. Spoon some drained canned chickpeas on top. And then layer the vegetables and the arugula. Fold in the edges and gather the wrap, rolling it closed. Cut in half and serve. It’s a great brown bagger and it makes a great school lunch, too.
