Magic Shakshuka with Roasted Tomatoes & Goat Cheese
Ingredients:
• 2 large tomatoes, halved
• 1 bell pepper, finely chopped
• 2 garlic cloves, minced
• 1 tbsp olive oil
• 1 tbsp tomato paste
• 4 eggs
• Smoked paprika, salt & pepper — to taste
• Crumbled goat cheese or feta
• Fresh parsley or cilantro
Instructions:
1. Heat a skillet over medium heat. Place the tomato halves skin side up and cover. Cook for about 7 minutes until the skin softens and peels off easily.
2. Peel the skins off the tomatoes and mash them right in the pan.
3. Add olive oil, chopped bell pepper, garlic, smoked paprika, salt, and pepper. Cover and simmer for 5-7 minutes to let the flavors meld.
4. Stir in tomato paste and cook uncovered for 3-4 minutes until the sauce thickens. Adjust seasoning to taste.
5. Make four small wells in the sauce and gently crack the eggs into them. Cover and cook until the whites are set but yolks remain runny, about 5-7 minutes.
6. Sprinkle with crumbled goat cheese and fresh herbs. Serve immediately with warm crusty bread or pita.
