This is my easy recipe on how to make banana. It’s not the original recipe. Let’s have a slice. Look at that inside. Literally, look how flaky and delicious this is. M/2 cup of warm milk. 1/3 cup of sugar. 1 tbsp of yeast. Just mix that bit. 1 cup of allpurpose flour. Mix that until it’s all combined. Cover it up and let it rest for at least a half an hour. The yeast is starting to activate. I’m going to add a teaspoon of vanilla. Three eggs at room temperature. Pinch of salt. Want to scramble those eggs. Three cups of flour. We’re going to mix it in a stand mixer. And you’re going to mix it for about 12 minutes. Dough will start to toughen up. We’re going to add in 1/2 cup of melted butter. Put it into a bowl. Cover it up and let it rise for about an hour. All right. Okay. We got to flatten out the dough. Zest and orange. Raisins. Half cup of walnuts. Half cup of cranberries. Really fold all in. Put right into the penetrating liner. By the way, score the top. One side to the other. Like that. Cover it up. Put it in the fridge for at least 12 hours. Took it out of the fridge. I’m just going to let it sit out at room temperature for about 2 hours. Preheat the oven to 350° and put it in for about 45 minutes. It’s such a good bread. You’re going to love this.

Ingredients
• 1/2 cup warm milk
• 1/3 cup sugar
• 1 tablespoon yeast
• 4 cups all-purpose flour, divided
• 3 eggs, room temperature
• 1/2 cup melted butter
• 1 teaspoon vanilla
• Zest of 1 orange (about 1 tablespoon)
• 1/2 cup raisins
• 1/2 cup dried cranberries
• 1/2 cup walnuts (optional)

Instructions
1️⃣ Make the sponge
• In a mixing bowl or stand mixer, combine:
• Warm milk
• Sugar
• Yeast
• 1 cup flour
• Mix until smooth, cover, and let sit 30 minutes or until foamy.
2️⃣ Finish the dough
• Add eggs, vanilla, and orange zest. Mix well.
• Add the remaining 3 cups flour and mix 1 minute.
• Pour in the melted butter and continue mixing 10–12 minutes
(Dough will be sticky — that’s correct!)
3️⃣ First rise
• Cover the bowl and let the dough rise 1 hour, or until doubled.
4️⃣ Add fruit + shape
• Gently deflate the dough.
• Fold in raisins, cranberries, and nuts.
• Shape into a ball and place in a 5–6 inch brioche liner
(or a tall cake pan of similar size — around 6” by 4–5” tall)
5️⃣ Cold rise
• Cover and refrigerate 12–24 hours.
6️⃣ Final rise
• Remove from fridge and let rise at room temperature 2 hours.
7️⃣ Bake
• Preheat oven to 350°F (175°C).
• Bake 40–45 minutes or until deep golden and reaches about 190°F internal temp.
• If browning too fast, loosely tent with foil.
