Mayo is fantastic. It’s a great supporting cast for mustard and onion. Doesn’t try to take too much credit. It’s happy to let the other flavors be the stars of the show.
Ketchup, on the other hand, is like the person who keeps talking over you and doesn’t let you get a word in edgewise. Everything you put it on just ends up tasting like ketchup.

My husband will die on the hill of his ketchup-only dogs, but my go to is horseradish mustard, shredded cheddar, jalapenos and onions. Lots of onions.
