This has inspired me. I must make one for dinner. The only thing it would be difficult to find around here is basil 🙁

Yum yum yum! I make a similar one in summer when we can grill chicken and throw a slab of mozz on at the end. Little basalmic glaze, spinach, tomato, with or without pesto because my husband is a heathen and doesn’t want it…. So yummy.
