This is a more detailed breakdown of the rainbow panoli cookies I made for my holiday cookie box this year. So, it starts off with some melted butter, almond paste, and sugar. And you whip that all up. And then in goes the egg whites and vanilla. And that’s really the whole dough. It’s a very simple dough. It will be a touch on the wet side, but that’s normal. I dye some of the dough green, some red, and I portion it out into teaspoon sized balls. Then I take one of each color and form a nice cookie. And using greased hands or slightly damp hands here is really essential cuz it’s a sticky dough. I press one side of the cookie into some pine nuts and then I bake them off. And I feel like they just look so festive and cute. Then to really drive home that rainbow cookie vibe, I melt up some dark chocolate. I dip the bottom of each cookie into the chocolate and then let them set on a wire rack. That little bit of chocolate with the almond paste and the pine nuts, so good. And they add a pop of color to your cookie
