It looks bland, defenders saying it‘s a classic but why? Looked it up, and preparing it in a bladder is similar to sous vide cooking so the meat is super juicy. As for taste, the bird is stuffed with foie gras and truffels and along with the meat juice thats supposed to result in a delicious, flavourful sauce. And it‘s not just a classic in some medieval history sense when people lacked spices, apparently one of the most renowned chefs in the world made it his specialty and it‘s not bland or rubbery at all

This is classic cooking – it’s the origins of ‘en papillote’ cooking in paper. This is cooking in a bladder to slowly steam the chicken to keep the moisture inside. It’s not stupid if you’re cultured 😂

I have a relative who worked in a restaurant that served this. Apparently it was difficult to cook because if the bladder (yes animal bladder) touched the side of the pot it would burn and break. Bladder asside, I find the presentation of the feet rather off putting. I am sure it tasted good though.

En vessie is the precursor of sous vide cooking. It keeps the moisture and flavor and cooks very gently.

The chicken is supposed to be cooked in it’s own juices plus whatever ingredients the chef puts in the stomach/intestine

I remember seeing this in an episode of Parts Unknown. I think it’s served with a truffle sauce? Kind of weird to show off getting it out of the bladder table side, but I bet it’s friggin delicious.

This is a Le Bresse chicken. Many people have no idea how special it is. It’s the only chicken breed in the world that is capable of growing intramuscular fat, like beef.
It’s a treasure.

I actually visited this restaurant years ago when I was in France. This is restaurant Paul Bocuse in Lyon, and it’s still been one of my favourite experiences.
This is an old school Haute cuisine style that was extremely popular in the late 19th and early 20th century, and it’s emphasis is opulence. So yeah, this looks kind of alien today, but would have been the pinnacle 100 years ago. I can assure you that this would be extremely tasty.
