Christmas dinner isn’t complete without a delectable, rich gravy, bringing all the different elements together. If you’re not satisfied with a quick Bisto job, recipe creator Ebenezer Odeniyi, who goes by Veganezer on TikTok, has shared his ultimate gravy recipe that will blow your family and friends away.

You won’t need anything fancy, just a handful of vegetables to make a rich base, and some familiar and unconventional store cupboard favourites. In a recent video, Ebenezer wrote in the caption: “This Christmas gravy…. Thick! Rich!! Silky!!! The kind that makes you wanna baptise your whole plate. If your roast doesn’t deserve this… upgrade your roast!”

He said: “This is how you make the Christmas gravy that silences the whole table. No packets, no shortcuts, just deep, rich, proper flavour.

“Now this is one banging gravy that everybody’s gonna love.”

The recipe developer included a plethora of veggies in his gravy base, including shallots, carrot, celery, mushrooms and garlic. He also added red wine, soy sauce, Dijon mustard, and a blob of Marmite, for good measure.

Ebenezer continued: “Gravies don’t get any better than this.”

Ebenezer’s video has been viewed over 225,200 times, receiving 6,369 likes and 154 comments. One person wrote: “That’s my Xmas dinner gravy sorted, looks banging.”

Matt said: “Tomato puree and marmite are a short cut.” Natalie commented: “Omg that looks absolutely fabulous!! A proper gravy.”

Lawrence replied: “Marmite cheeky, gonna give it a try thanks.”

However some argued that the recipe wasn’t “real gravy” as it didn’t contain any meat juices. Dawn wrote: “I will give it a miss thanks it’s not real gravy if there are no meat juices.”

Hall said: “The juice from meat juices needs to be chilled so you can remove the fat, I avoid turkey juice at all costs, it makes a horrible tasting gravy.”

Caz echoed: “Nope that’s not Xmas gravy as it doesn’t have the juice from the meat in it.”

So if you’re looking for the perfect gravy recipe to serve at your Christmas dinner, this is how you can recreate Ebenezer’s recipe at home.

Ingredients

One tbsp olive oilTwo shallots, chunksOne carrotOne celery stalk150g mushroomsTwo cloves garlicTwo tbsp tomato pureeTwo tbsp flour1/2 cup red wine500ml veg stockOne tbsp soy sauceOne tbsp dijon mustardOne sprig rosemaryFew fresh thyme leaves1/2 tsp marmite1/4 tsp sugarSalt and pepper, to taste

Method

Heat up the pan on medium heat, add the olive oil, shallots, carrot, celery, mushrooms and fry for six to eight minutes. Add the puree, flour and give it a mix.

After a minute or so add the wine, stock, soy sauce, mustard, rosemary, thyme, marmite, sugar, salt and pepper then allow to simmer for 20 minutes on a low heat.

Put a sieve over another pot then pour the gravy into them, getting all the liquid out.

Add the pot to warm though and gain some thickness. Warm up when ready to use and enjoy.
