Tofu is getting damn expensive so I’ve started keeping some cooked beans/split peas etc in the fridge and just dressing them up in whatever for various meals.
Recipe – sauté a couple of finely diced onions in a tablespoon of whatever oil you like until translucent. Add three finely diced tomatoes and season. I used salt, white pepper and chilli flakes. Cook for a minute and add 1.5-2 cups of cooked pulses of some description – mashed if you like (if I use bigger pulses like chickpeas I have at them with a fork to smush them up a bit). I used split fava beans. Add a quarter cup of water or the cooking liquid from the pulses, if you remembered to save it, which I did not, whoops. Cook, stirring often, until the tomatoes are nicely cooked through. Makes two big portions or would feed three or four if served on toast or as part of a cooked breakfast.
