Made a practice run of Kenji’s sfincione recipe before Christmas Eve. Great recipe and very accessible.
A few changes: I had Pecorino Romano, but not Cacciocavello. Probably slightly funkier, but I love that stuff. I also have a baking steel, so the cook time was a bit quicker than expected.
I wish the site had weights for everything. I know I don’t need onions or breadcrumbs to the gram, but it’s a good baseline.
