Meatballs:
340g Lean ground beef
3 links Italian sausage
2 Eggs
1/3 cup Parsley (chopped)
1/2 cup Italian style breadcrumbs
1/3 cup Parmesan cheese (grated)
1/2 tsp Salt
1/2 tsp Black pepper
1/2 tbsp Garlic powder
1 tsp Sage (dry)
1 tbsp Olive oil (for frying)
Soup:
1 tbsp Olive oil
1 White onion (diced)
8 cloves Garlic (chopped)
2 stalks Celery (diced)
2 Carrots (diced)
3 1/2 cups Chicken broth
3 cups Beef broth
1/2 tsp Salt
1/2 tsp Black pepper
1 cup Orzo pasta
2 Bay leaves
3-4 cups Baby spinach
1. Pan fry meatballs on medium/high until cooked. Appx 10min
2. Build soup
3. Add cooked meatballs to soup
4. Add spinach and cook for 2min
5. Top with Parmesan cheese
I’m ready to sleep. Now, today we’re making probably one of the most comforting things we’ve ever made. Italian wedding soup. Let’s get right into it. Ground beef in our bowl. Italian sausage. We’re just going to take the casing off. Eggs. Straw parsley. Italian breadrumbs. Grated parmesan. Black pepper. Salt. Garlic powder. Lastly, some sage. And now we mix. Make our meatballs. It’s like little guys like this. We’re going to heat up some oil. Add in our meatballs. Once they’re cooked, we’re going to take them off the heat. Build our soup, which starts off by heating up some olive oil in a pot, diced onion, celery, and carrots. After a few minutes, add in our minced garlic. Going to cook these on medium heat to soften them up. Chicken broth, beef broth. Add our orzo pasta, salt to taste, black pepper, bay leaves. Let it simmer until that pasta’s cooked. We’re going to remove the bay leaves. Add our meatballs back in. Add in your chopped or baby spinach. Just let it cook down for a couple minutes. Freshly grated parmesan. Cheers. Cheers.
