
I just found two boxes of frozen
Girl Scout Thin Mint Cookies
in my freezer from earlier this year. I’d like to make them into ice cream but I’m trying to figure out what the base would be. Should I just make a straight vanilla custard base? Or is there a secret involving chocolate , mint and ice cream that you can share?
What thoughts do you have? TIA.

I’ve done a regular chocolate ice cream and just added mint extract, mint chocolate pieces and Oreos and it was so good! Definitely gave thin mint vibes, so using actual thin mints would be even better 🙂
I once made a standard base and pulverized thin mints in a blender and cooked them in. It tasted perfect but the texture was too dense, I think because the thin mints made it have a higher percentage of solids. Next time, I’d make a mint ice cream (which I like to do by using half mint extract and half fresh peppermint) and using chopped thin mints as a mix in. Bet a fudge swirl would rock in that too.
