Brandon and Caitlin Schewe launched Canary Club this past June. The location sits inside the Waterline Bonita Springs Street Retail building on Old 41 Road. Guests can try wood-fired pizzas alongside shareable plates that pull from Middle Eastern cooking traditions.
This marks the third venture the Schewes have started in downtown Bonita Springs in six years. The duo also runs The Bohemian and Downtown Coffee and Wine Co.
“We wanted to do something different,” said Brandon, according to News-Press. “With construction prices and rising food costs, I thought what would make sense from a business standpoint. I wanted what I do to last. And do it cost efficiently. To do that, I got a wood-fired pizza oven.”
“I didn’t want to do Italian or Mediterranean,” Brandon said. “Nobody focuses on the Middle East region, and those flavors are awesome.”
A seven-ton wood-fired oven anchors the space. It arrived from California. Twelve pizzas can be cooked at once inside, finishing in five minutes or less when temperatures hit 500 to 550 degrees.
Diners will find harrisa barbecue chicken, the Shroom Shawarma, lamb, and pepperoni with za’atar honey on the menu. Appetizer choices include Israeli couscous, kale fattoush, kefta, pita, and hummus.
“All the hard work behind the scenes ends in the results we want,” Brandon said. “I want people to subconsciously know that it tastes so good because of what happens behind the scenes.”
“It pushes the boundaries, but we don’t get out of your comfort zone,” Brandon said.
You can visit Canary Club at 10610 Founders Way, Suite 140, in Bonita Springs. Doors open at 11 a.m. each day except Tuesdays. Seating options include indoor and outdoor areas. Mondays feature BOGO pizza deals, while $20 lunch specials run throughout the week.
