Inspired by our current trend of low-effort victories:

Rinsed a can of garbanzo beans and threw them in a pasta bowl. Cut up a Persian cucumber and a handful of cherry tomatoes. Opened a Trader Joe’s Handful of Olives packet and threw that in, along with a couple healthy forkfuls of cottage cheese. Added a dollop of this Garlic Spread I found at TJ’s that’s just garlic, oil, lemon, and a couple preservatives. Flaked a can of salmon into the middle, and topped it all off with fancy salt, pepper, and some balsamic glaze (also from Trader Joe’s — can you tell I’ve been shopping?) Added a drizzle of olive oil after the picture.

This is the most effort I’ve put into feeding myself in a little while and I love how it turned out. Ignore the Cinnamon Sugar next to the bowl, that’s still out from breakfast.
