Started smoking a brisket before realizing a snow storm was going to hit. Left it on the weber kettle until it started stalling around 165 and finished it in the oven at 250. Rested overnight in the oven at 150 and this was the result. Wish it had a better smoke ring but still came out pretty great.

    Smoke ring does nothing for flavor, I’d have let it go a bit longer for the bark to get darker but I love a meteorite.

    all things considered that is an excellent looking brisket. oven finishes are not ideal but totally acceptable and in my opinion is only noticeable when you are critiquing.

    I’ve never rested at 150 in the oven before though
