Artichoke Bruschetta

I made this without bread cause I’m trying to cut carbs. Would taste great on bread.

Quick note: you can use store-bought Parmesan crisps (like Parm Crisps) to save time — no need to make them from scratch.

This artichoke bruschetta takes about 5 minutes and works great for holidays or parties.

Ingredients:

1 can artichoke hearts, drained and chopped
½ cup cherry tomatoes, finely diced
1 small garlic clove, minced
1½ tbsp olive oil
1 tbsp lemon juice
Salt & black pepper
Optional: herbs or light balsamic drizzle

Steps:
Drain and chop the artichokes.
Mix everything together in a bowl.
Let sit a few minutes if you have time.
Spoon onto Parmesan crisps and serve.

Parmesan Crisps (Optional Homemade)
