2/3 cup of no fat cottage cheese (drained)
2 tbsp nutritional yeast
2 tbsp pizza sauce
low fat turkey pepperoni
Drain and mix the cottage cheese with the nutritional yeast and seasonings of your choice. I usually uses some garlic, crushed red peppers, and Italian seasoning. This will help clump up the cheese. Apply sauce, cheese, and toppings to the tortilla and cook on a pizza stone at 550 for 5-7 minutes.
It's important to get the sauce and cheese to the edge or the tortilla will burn. If you don't have a pizza stone, I'd use an upside down cast iron pat that I let heat in the oven. If you don't then it'll be fine but the bottom won't crisp up. This really hits the pizza itch for me and 2 of them will fill me up.
