I boil the slices for 20mins to get rid of some of the bitterness. Then in a new pan, put one cup of sugar with 2/3 cup of water. Add the oranges when the sugar is fully melted and has reached 100F C. Cook the oranges till there is no sugar left and it has reached 120 C. It usually takes 20mins, I flip them half way to make sure each side is coated!
I let them rest for 24h hours. Then dehydrate them at 85C for 35mins. I let them rest for a few more hours and then dip them in chocolate!

how thick do you cut the slices? any particular kind of oranges that should be used? every time i try to make this by the time the syrup reaches the right temp, the pulp is gone and i am just left with the rind 😢

Omg the dehydrator tip! I have some candies orange peels that are still just a little too wet for my liking. I’m going to pop them on my dehydrator!!! And then mine are getting a dark chocolate dip 😊

When I make these, I save the now-orange-infused leftover syrup for cocktails.

It’s fairly simple but takes a while!
