Bordeaux continues to vibrate to the rhythm of its ovens. As the festive season approaches, Michelin-starred chef and TV personality Philippe Etchebest has unveiled his ambitious new project. From December 23, 2025, a new address will be added to the culinary landscape of the historic center: Le Classique.
A fourth Bordeaux address
After revealing the initial details of this project at the end of the summer, Philippe Etchebest confirmed the long-awaited date on his social networks. The establishment will open its doors on December 23 on rue du Pas-Saint-Georges, in the heart of the Saint-Pierre district.
This new restaurant completes an already well-established ecosystem in Bordeaux: Le Quatrième Mur in the Grand Théâtre and Maison Nouvelle in the Chartrons district are just a few of the city’sMichelin-starredrestaurants. Not to mention Signature, the catering business located on the Allées de Tourny. With “Le Classique”, the ambition is clear: to restore French savoir-faire to a central position . Forget complex destructuring, and make way for a more traditional approach, conceived as a return to the roots in the plate, in the gesture and also in the service.
A menu centered on the great must-haves
The concept is clear: to put the spotlight back on the emblematic dishes of French gastronomy. The menu is based on carefully selected raw ingredients, processed on site by our kitchen teams.
Already unveiled, the menu focuses on characterful starters, such as mackerel with escabeche or pâté en croûte (from €12 to €18). On the main course, some dishes are prepared and cut in-house, such as veal steak with peppers orherb-roasted shoulder of Pyrenean lamb, priced from €30 to €37.
Other classics served by the plate complete the offer, such as pike quenelle or the very emblematic hare à la royale, with prices ranging from 27 to 42 euros. Toppings can be added as desired, from a simple salad to macaroni gratin with Bigorre black pork.
Desserts by the plate… or on a cart

To round off the meal, “Le Classique” also relies on tradition. Individual desserts revisit the great standards, from Grand Marnier soufflé to Paul Bocuse-style crème brûlée, priced from 10 to 18 euros.
A dessert cart will also be available in the dining room, for those who wish to extend the experience. Expect to pay 10 euros for a slice, or 32 euros for the formula dubbed “la grande expérience”, designed as a truly gourmet finale.
