Third can from a recent vacation to Japan. This might be my favorite so far, followed by the rainbow smelt. Even though they’re both called smelt, this one is very firm, too moist to be a jerky but certainly toothsome in a good way. Flavor is strong without the bold fishiness that I associate with mackerel. The spine crunch is very faint in the background and makes me feel like I did something about my calcium intake for the day. I ate it with tofu, black vinegar, roasted sesame oil, and some white salt shrimp. The flavors went really well together.

I think these would be really good fried crispy and dipped in some sweet chili sauce.

    I’m making an art piece consisting of the face of tinned fish boxes with really great artwork and this has been my white whale ever since starting. These tins are truly beautiful artwork both inside and out.

    Those look gorgeous! And I never thought of using roasted sesame oil and sweet chili sauce with canned fish, but that sounds like heaven! I’m using both tomorrow!
