12 Days of Fishmas Day 12: Shrimp Scampi
The 15-minute dinner that feels like a party. Make this one with or without wine – I give you my fortified stock trick if you want to skip alcohol. Quick garlic butter with chili flakes, shrimp until pink, lemon and herbs. Any size shrimp works but the big ones make it a showstopper. Merry Fishmas to us all!
INGREDIENTS:
🔹 1 ½ lbs extra large/jumbo shrimp (16-25 per lb)
🔹 ½ cup stock (shrimp, vegetable or chicken) OR 1 cup if making fortified version
🔹 6 tbsp butter
🔹 6 cloves garlic, minced
🔹 ¾ tsp kosher salt
🔹 ¼ tsp black pepper
🔹 ¼ tsp red chili flakes
🔹 1 tbsp fresh lemon juice
🔹 2 tbsp flat leaf parsley, diced
🔹 Baguette for serving
INSTRUCTIONS:
1. Peel shrimp, keeping tails intact if serving with bread. Pat completely dry with paper towels.
2. Melt butter in large skillet over medium heat. Add garlic, salt, pepper, and chili flakes. Sauté gently until softening and fragrant, about 2 minutes.
3. Pour in stock and bring to simmer. Let reduce about 2 minutes.
4. Add shrimp and cook until just pink, 2-4 minutes depending on size.
5. Stir in herbs and lemon juice. Taste and adjust seasoning. Pile on platter with baguette for dipping.
For Fortified Stock (optional): Brown shrimp shells in 2 tbsp olive oil over medium-high heat for 5 minutes. Add 1 cup vegetable or chicken stock, bring to boil, simmer 10 minutes until reduced by half. Strain and use in recipe.
