
made this last weekend for my sister. I was actually trying a new slow n sear type of basket divider. I think the brisket was about 14 pounds before trimming and it just barely fit. Super happy with how it came out although I think I was too busy to take pictures before wrapping it up and holding it in my oven overnight.
Very happy with the divider basket. Basically filled it up with charcoal and lit up a small chimney of lump charcoal, and set that on one side of the basket. It basically burned cleanly without any messing around for about six hours. Super great since I didn’t have to mess with it or adjust the vents. Just push the coals a little bit at the five hour mark. I was also able to use the side with the charcoal to put a touch oven where I put all the trimming with a bit of water to render down for the tallow I would use later. Super happy to be getting back to grilling.

Looks great. Your setup is VERY solid as well.
