Don’t ever use anything nonstick. Only use a cast iron placha

No risk, but you may have a hard time getting up to temp with the reduced airflow you will get with this. May just have to be patient while it slowly gets up temp. You want something close yo 450-500 to use this like an actual plancha/griddle. Imagine trying to maintain 500 with a plate setter in place. Not super easy. A fan powered temp control system would help with this.

It wouldn’t explode. My biggest fear with that would be warping or damage to it. Not so much to the egg.
How did those foods get grill marks? The surface is flat.
